This secret gravy can help you make more than 50 dishes – Times of India


When we talk about Indian food, most of the main course includes some kind of curry dish that you can eat with Indian bread like naan, chapati or roti. Thus, a good gravy becomes a necessity, which not only makes the dish delicious but when it goes wrong, it can also spoil the dish. But what if we tell you that there is a gravy that can help you make not just 1 or 2 but more than 50 dishes? Recently, Master Chef Pankaj Bhadoria shared one such secret gravy recipe, which can be prepared very easily at home. Calling it ‘Magic Gravy’, this is a recipe that can be followed to make both veg and non-veg dishes. Whether you want to make chhole, kofta, aloo mitti or any desi dish, this gravy will make it more delicious. Here is the recipeā€¦

Essential Ingredients
4 large onions
8 large red tomatoes
4 inches of ginger
6-8 green chilies
1 tbsp garlic paste
2 tablespoons red chili powder
2 tablespoons of coriander powder
1 tsp turmeric powder
2 tsp garam masala powder
1 tablespoon celery
1 tsp cumin
2 inches of cinnamon
3 bay leaves.
6 green cardamoms
8 cloves
15 cashews
1 teaspoon of salt
Half a cup of oil

Method

  • First, finely chop the onion, green chillies and ginger. Then wash the tomatoes and take out the crushed spices in a bowl.
  • Then add a cup of water and mix well. Meanwhile, heat oil in a pan, add all the spices, and cook on low heat.
  • Now add salt and let the paste boil. Add finely chopped onion to it and fry on low flame until it turns light in color.
  • Add chopped ginger and chillies. Add the masala paste and cook till the gravy gets oil.
  • Now add the chopped tomatoes and cook till the tomatoes turn into pulp. After adding tomatoes, the color of the gravy will be dark.
  • Now add cashew paste and mix well. Now use it to make vegetables. You can also add vegetables to it.

Hacks to make it better
  • We can add some ingredients like potatoes, flour and vegetables to reduce the water content in the gravy.
  • You can also add cashew paste to the gravy. This will not only thicken your gravy but also make it tastier.
  • You can use curd and fresh cream to make a thick gravy.
  • Along with onion and tomato, you can also add peanuts to the gravy.
